I am pretty much going to skip the story of my favorite snack because I am pretty sure this is their third appearance on the blog and it’s because we love them so dang much! I have been making this modified recipe for about a year and love it! Hope you do too 🙂
INGREDIENTS
2/3 cup Honey
1 cup Peanut Butter
2 cups Oatmeal
2/3 cup Ground Flaxseed
1 + 1/3 cup Unsweetened Coconut Flakes
1/4 cup Sliced Almonds
2 Tbsp Chia Seeds
2 Tbsp Poppy Seeds
1 Tbsp Vanilla
1/2 cup Mini M&M’s
DIRECTIONS
- Stir all ingredients (minus M&Ms) together until thoroughly mixed. I use my kitchen aid.
- Fold in M&M candies.
- Cover and let chill in the refrigerator for about 15 minutes. *This part is optional but I find it is easier to roll into a ball.
- Roll into balls. I almost always use a cookie scoop now to keep a consistant size!
- Store in an airtight container and keep refrigerated for up to 1 week – if they stick around that long!!! You can also freeze them.
