Happy Halloween!

Recently on Instagram, in a lot of my posts and stories I have talked about my goal to live a life each day that I love. A few months back, I found myself living for Friday. For the weekends. For that next BIG thing. Do you know what I’m talking about? Maybe so.

So I took my life into my own hands and wrote out a list of activities and tasks that I love and that fill up my cup. (I will do a whole blog post about this process another time).

One thing I have learned about myself is I really love celebrating holidays both big and small. I find enjoyment in decorating my home for the seasons and making the holidays feel special like planning meals that add a little bit of magic all year long.

I started this pumpkin stew tradition 2 years ago. It was delicious, fun and not so difficult that I decided to keep it going. Let me know if you try it out and how you make it fit special for your family.

Goulash Like Mom Made

I would say this is more of a goulash type recipe. Growing up, my Mom always made the best goulash and I am so sad that I didn’t get more of her recipes before she passed away. I did find some scribbles of recipes here and there so they aren’t all lost but I often find myself just wanted to give her a call and ask how she made something. Don’t take talking to your Mom for granted and write down all your favorite childhood recipes!

Crockpot Halloween Stew

  • 2 lb Beef Tips
  • 1 Yellow Onion – Chopped
  • 1 Bell Pepper – Chopped
  • 3 Cloves of Garlic – Chopped
  • 3 cups Water (1 cup for stew and 2 cups for cooking pasta)
  • 3 cans Tomato Sauce (8oz)
  • 2 cans Diced Tomatoes (14.5oz)
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 tsp Salt
  • 2 cups Spinach
  • 1 cup Peas
  • 1/2 lb Carrots – Sliced Like Pumpkins
  • 8 oz Elbow Macaroni

Halloween Stew

  1. Chop and prepare all your vegetables – See below for how to cut pumpkin carrots

  2. Line your crockpot and add in vegetables, spices, cans of tomatoes and sauce, steak tips and 1 cup water

  3. Set for 6-8 hours on low

Macaroni

  1. 30 minutes before your are ready to serve your stew, boil 2 cups of water. Under cook your macaroni by 1-2 minutes, drain and add into your crockpot

  2. Prep and cook side dishes. Our favorites are honey cornbread or pre-baked rolls

  3. Serve and Enjoy!

Pumpkin Carrots

  1. Wash and peel your carrots

  2. Using a sharp knife, cut down 2 slits lengthwise down your carrot to create the stem of your pumpkin

  3. Make a perpendicular cut to the edge of the stem in order to remove a triangle shaped section from each side. Take note to not cut throw your pumpkin stem

  4. Slice your carrot like normal to create multiple little pumpkin carrots!
