You guys… February is one of my favorite months! I love LOVE! Everything feels so happy and bright + it’s the hubby’s birthday 🙂 I have a few tricks & treats (whoops wrong holiday) up my sleeve to make sure he goes out with a bang to celebrate his 20’s! Yup that’s right next year is the big 30! Holy moly I can’t believe it!
Speaking of treats, I tried a new + SO easy twist on our classic favorite granola bites. Original post + recipe here from backkk in the day. I have made these for years + wanted to share with y’all how I have updated them!
These are probably our easiest snack to make when we meal prep, they store great + they’re pretty healthy! I usually eat 1 — sometimes 2, they are rather filling + give me a little burst of energy to get through that mid-day slump.
Check out the ingredients below + have a great Valentine’s Day <3
- 1/3c. Honey
- 1/2c. Peanut Butter
- 1/3c. M&M's Chocolate Candies (I also have used Mini Semi-Sweet Chocolate Chips or Mini M&M's)
- 1/3c. Ground Flaxseed
- 2/3c. Unsweetened Coconut Flakes
- 1 Tbsp. Chia Seed
- 2 Tbsp. Sliced Almonds
- 1c. Dry Oatmeal
- 1 tsp. Vanilla
- Mix everything together & VOILA! Form into balls & store in air tight container.
- These also freeze nicely for several weeks but I don't know how long exactly because we eat them so quick! I do usually store mine in the fridge just because I like them cold 🙂
